There really isn’t much to this recipe because I use my favorite BBQ sauce from a jar but since a couple of people have asked me how I make it, I wanted to put up a quick post. Also, check out Coach’s recipe for BBQ Pulled Pork in a Slow Cooker here.
Easy BBQ Pulled Chicken
2 chicken breasts, boneless, skinless
4-5 chicken thighs, boneless, skinless
Salt and pepper
1 1/2 bottles of Stub’s BBQ sauce (or whatever your favorite is)
1 medium onion
Slice a medium onion and place at the bottom of the slow cooker. Season chicken with salt and pepper then place on top of the onions. Add about a bottle and a half of the BBQ sauce. Turn the cooker on the Low setting and let it cook for about 6 hours.
After about 6 hours, take the chicken out of the cooker and using your fingers or two forks, shred the chicken. Once shredded, I like to put it back in the BBQ sauce in the slow cooker for a little longer (15-20 minutes). Serve on rolls with some of your favorite sides, you’ve got a great summer dinner that required hardly any fussing!
