Even as I’m typing this, I’m thinking, “this may seem pretty boring”. Banana bread? Yawwnnnn. It’s not as exciting as, say, the RnR March Madness going on the next page! (Have you voted yet??)
I’m working on some new recipes that should be fun and some that’ll be good to make with kids, but in the meantime, enjoy this basic – not boring – simple and delicious recipe for banana bread.
1/2 cup solid vegetable shortening
1 cup sugar
3/4 cup mashed ripe bananas (I used two medium-sized bananas)
1 tsp baking soda
1/2 tsp salt
1 1/4 cups flour
1/2 cup roughly chopped walnuts
1/4 tsp cinnamon
Preheat oven to 350 degrees. Line your 9x5x3-inch loaf pan with aluminum foil and grease the foil. Cream the vegetable shortening and sugar with an electric mixer. Add the eggs, one at a time, beating well after each addition. Add the mashed up bananas (I used the back of a fork to mash up the bananas) and mix well. Add the baking soda, salt, flour, nuts and cinnamon and mix thoroughly. The dough will be sticky.
Pour the dough into the pan and bake about an hour. The center of the bread should be brown and set.
