Mini Pumpkin Chocolate Chip Muffin


I made these Mini Pumpkin Chocolate Chip Muffins tonight, for my son’s second grade Halloween party tomorrow.  It’s an easy recipe that doesn’t require a lot of ingredients or a lot of time, though it does help if you remember before, oh, say, 9 p.m. that you volunteered to bring them in for the next day.   But even if you’re like me and forget…these moist and not overly sweet muffins are a no-stress winner.

Two quick notes – this recipe doesn’t quite make 48 mini muffins.   If you don’t fill the muffin cups to the recommended 2/3 full, you can stretch the mixture to 48 mini muffins.  Otherwise, you’ll get about 36-40 mini muffins out of this recipe.   My other note is that while the recipe below calls for 3 spices, I chose to only include cinnamon.  Yes, nutmeg and cloves are very traditional in pumpkin recipes, but I’m just not a fan.  You can choose to include it or not.  You need to include the salt, though.

Mini Pumpkin Chocolate Chip Muffins

3/4 cup granulated sugar

1/4 cup vegetable oil

2 eggs

3/4 cup canned pumpkin

1/4 cup water

1 1/2 cups all-purpose flour

3/4 tsp baking powder

1/2 tsp baking soda

1/4 tsp ground cloves

1/2 tsp ground cinnamon

1/4 tsp salt

1/4 tsp ground nutmeg

3/4 cup mini semisweet chocolate chips

Preheat oven to 400 degrees.  Line mini muffin pan with paper liners or grease and flour the muffin pan.

Mix sugar, oil and eggs in a large mixing bowl with a wooden spoon.  Add the pumpkin and water and mix to combine.   In a separate bowl, mix together flour, baking soda, baking powder, spices and salt.  Add the flour mixture to the pumpkin mixture and mix until well incorporated.  Stir in the mini chocolate chips.

Fill the muffin cups about 2/3 full with batter.

Bake in the preheated oven for about 18-21 minutes, until dark golden brown.  Transfer the muffins to a wire rack to cool.  You can dust the tops with powdered sugar too once they muffins have cooled.   Enjoy!   (This recipe will also make 12 full size muffins, perfect for Thanksgiving day breakfast)
